Chipotle Hummus Recipe w/ variations

Here's a hummus recipe you might like to try. I also made a Jalapeno and Lime hummus and my first pita bread with 1 c. whole wheat flour to 2 c. white.
I saw a recipe for a pineapple, curry coconut hummus that begs my attention.
Hummus is usually made from garbanzo beans (chickpeas), but can be made with black beans, w/ no tahini (sesame seed paste) or substituting peanut, almond or cashew butter for the tahini. There are so many variations.
Serve it with warm pita squares, and crudite' -veggies for a lunch, snack or small meal.

Veggies to use: Olives, radishes, jicama, raw green beans (very alkalinizing!), carrots, celery, raw red, orange, green or yellow peppers, zucchini or cucumber slices, etc.

Mediterranean Food is some of the healthiest for you.
In my small town of Vernonia, Oregon, The Blue House Cafe, with Armenian owners make the best chicken gyros with pomegranate sauce, or beef and lamb gyros w/ Tzatziki sauce. Chickpeas or Garbanzo beans are high in protein, molybdenum and magnesium, etc.
1 cup provides 15 grams of the 50 daily grams of protein recommended.

(Since protein makes up 90% of our immune system, I use at least one serving of soy protein a day, for insurance. 60 studies show soy builds bone mass better than just calcium alone.) A quick cocoa or vanilla soy drink, (made with rice milk for me) or my favorite berry smoothie keeps my blood sugar level and gives me boundless energy. Chipotle Hummus
(Variation from internet recipe)
2 (15.5 ounce) cans garbanzo beans, drained
1/2 cup water
1/4 cup tahini (sesame-seed paste) or peanut, almond or cashew butter.
1/4 cup fresh lemon juice or lime juice
2 tablespoons extra virgin olive oil
1 canned chipotle pepper in adobo sauce
(I freeze individual peppers on a cookie tray and put in a freezer bag to avoid wasting the rest of the can, thinking I will use them again later…)
2 cloves garlic-I use much more per individual taste. Garlic is an anti-fungal, anti-viral, anti-bacterial agent. Also known to bring blood pressure down and thins blood.
1 1/2 teaspoons cumin
1 (7 ounce) jar roasted red bell peppers, drained
I broiled a red pepper and peeled it=less money.
6 oil-packed sun-dried tomatoes, drained
1/2 cup chopped cilantro
1/2 teaspoon salt- (I use sea salt.)
ground black pepper to taste

DIRECTIONS
Place the garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in the bowl of a food processor; blend until smooth. Add the red peppers, sun-dried tomatoes, cilantro, salt, and pepper. Pulse the mixture until the ingredients are coarsely chopped into the hummus base. Transfer to a serving bowl, cover, and chill until ready to serve. Can drizzle olive oil on top and garnish with cilantro and tomatoes or roasted red pepper.

Medication-Induced Nutrient Deficiencies

I picked up the information about medication-induced nutrient deficiencies at the Lloyd Center Pharmacy in Portland, and in my opinion, met one of the nicest and most knowledgeable Pharmacists- Don West. This is a compounding Pharmacy which means they can mix ingredients and customize medications when the standardized fare does not suit an individual. Americans have become the 7-11 generation, wanting convenience of popping pills which deplete nutrients and can cause horrible side effects and withdrawals instead of giving the body what it needs. I saw a Nutritionist on YouTube talk about a book she is writing with the title, 'Are You Too Lazy to Live?'

As you see, for example, taking an aspirin a day to 'thin the blood' actually depletes folic acid, Vitamin C, iron and potassium. Acidosis, Arthritis, Calcium and Disease



Our bones and teeth are our calcium bank. Four years ago, when I waited for my cancer surgery, I juiced and eliminated sugars and most carbs. On Thanksgiving, I made the traditional pecan pie, and thought I could just have one piece. My immune system let me know it was not okay. I got an eye infection the next day. I had to reschedule my surgery. In the winter, I loved hot chocolate, especially by the wood stove. One evening, again waiting for that dreaded surgery, I rationalized that since I had such a good dinner, surely one of those homemade cinnamon rolls and a cup of creamy cocoa would be okay with a base of good food in my stomach. The next day I woke up with a urinary tract infection. It was too easy to tip my PH and my immune system was already maxed. Arthritis, Polymyalgia, and Acidosis

Arthritis and Polymyalgia

Layering of medications is the norm in the medical field. A doctor told me a person would need a computer stronger than one at NASA to figure out the ‘polypharmacy effects’ among the drugs, and also with the body, when putting many medications together. My recommendation is to get a pharmacist for consulting about the safety of drugs and drug combinations for you and your loved ones-(they have doctorate degrees in medication-but make sure you shop around for an intelligent, knowledgeable, trustworthy one. Maybe two.)

‘Practicing’ Doctors are the number 3, (if not really #1) cause of death. Too many mistakes are seen as natural causes. Many Medical Doctors these days are operating in a conflict of interest, as they get paid well for passing out samples, and prescribing certain drugs, from Big Pharma. You can research about how Big Pharma knows what kinds of meds each doctor is prescribing. There have been thousands of dollars and gifts given to doctors to push certain drugs. The American Medical Student Association is pushing for a ban on this type of conflict of interest, knowing it has hurt and/or compromised many people’s trust in their doctors.

There are waves of certain medications. There was the big push of antidepressant use, followed by school shootings and mothers killing their own children, Ativan, Sleeping aids, Prilosec, Thyroid medications, etc. Now it's steroid use. Cortisone. Steroids are an immune suppressant, with some horrible side effects. If you pay attention to the tv commercials, and what your doctor suggests, you often can pick up the next wave of pharmaceutical marketing. Americans have been the trusting guinea pigs.
A microbiologist and doctor that I know has an educational tape called 'The Drugging of America."

The norm is giving one med, and then another for the side effects of the first drug or drugs, without acknowledging the symptoms as side effects of medication, and then prescribing more and more. Usually one doctor leaves you on the previous doctor’s medications, not stepping on hallowed ground, or taking the time to monitor the efficacy or safety of drugs you may be on. Many people for instance were left on antidepressants when they are usually only meant as a last resort, and a temporary basis. There is a doctor in Washington that did nothing but help people get off Paxil, for example. Some could not, as their hearts would race and flutter, etc.

One woman whose husband went to war two years ago was put on an antidepressant, and two years later, is on 13 medications, and having seizures. This is typical, unfortunately. Many American lives and families have been adversely affected by 'legal' drug use.

I would recommend Dr. Mercola's website. Google it, and join to get his weekly newsletter. I agree with most of what Dr. Mercola has to say. He covers many areas of health.

As for arthritis or polymyalgia, it is often from acidosis, which is caused by diet, stress, lack of exercise and medications. Acid waste lays down in the body’s tissues. There is inflammation and pain. The body tries to balance the acidity with calcium. Where does the calcium come from? Your bank account of calcium in bones and teeth, is robbed to do the job if your diet is lacking. There are two main types of arthritis: Osteo and Rheumatoid. My father was treated towards the end of his life with Lyrica and Oxycodone, which when combined cause joint and muscle pain. Side effects of medication alone can cause joint pain.

There are natural ways to treat arthritis, and acidosis in general. If someone tells you PH and acidosis isn’t a valid concern, have them watch an ambulance pick up someone having a heart attack. The person gets an injection of Calcium Chloride to neutralize the acid that is killing the heart cells. Even the IV’s are closely monitored for Ph, as an imbalance can be lethal. Also, chicken farmers take the chlorine out of the water for the flock so they don’t die early of circulatory disease. Test the chlorinated water sometime with a PH strip to see how acidic it is. Too much acid causes the body to lay down calcium deposits to ‘put out the fire’. Arthritis, bone spurs, joint pain, etc. are among the results. One doctor said the disease doesn’t matter, it’s the acid environment that has to be changed. Cancer and Candida thrive in acid environments. An Italian Oncologist interviewed by Mercola in a video, said cancer is a fungus, or a reaction to fungus.

Salsa and Guacamole Recipes



This late night blogging is making me very hungry! Here is a web link to roasted salsa. The roasted touch to the onion, garlic, tomato and jalapeno sounds wonderful.

Here is a great recipe I got years ago, for Guacamole:
Mash 2 ripe avocados. Add 1/4 c. finely chopped onin, 1 T. diced tomato, 2T snipped cilantro, 2t. jalapeno with or without seeds per taste, 1/2 t. salt and 1 T. lime juice. Serve with tortilla chips or as a garnish on Enchiladas, Rellenos, Chimichangas, Burritos, Tacos, Tostadas, etc.

My schedule seems topsy turvy still, and I have to admit there are two days now without walking. The water purifier is hooked up, plants watered and cleaned up, dishes done, recycling, compost and garbages waiting for morning, and I made a great apple crisp to share with two friends today. The last of Mattie's Bean Soup is gone, as is the cornbread with chile pepper flakes. My youngest daughter is prodding me to make muffins with cranberries, though she lives in Austin and can't eat them with me. There are so many recipes to share.

I'm so new at this blogging, that I'm still unsure how to get pictures with the posts. My snowy Scappoose house picture looked huge, and disappeared last night when I posted. I'm sure I will get the hang of it.

What's your favorite late night food? I wish I had some shredded wheat (pretty processed) or hummus with veggies and pita bread. I feel like sneaking in the apple crisp.

From Green Onions to Soup



I rent rooms in my Scappoose house, and showed a man new to the area, through the place yesterday. He liked the quiet privacy of the dormer room, with its great view of the creek, rock garden and fir trees. I showed him a restaurant in town, Ixtapa, and he was nice enough to treat me to supper. I shared my love of sliced green onions on top of the chile rellenos. (They set off Eggs Benedict nicely, also.) He had a tamale and an enchilada, with the bright green onions adding their color, crunch and flavor to the yellow and white cheeses melted in red sauce. We were ravenous, waiting for our meal, eating the fresh authentic salsa and light tortilla chips, asking for another salsa, being offered another bowl of chips. Aahhhh. Mexican food heaven.

Snow began to fall as I was leaving the restaurant. We've not had this much snow in the Northwest for 40 years. I had dog food to buy for a neighbor, some greens to pick up to try a new green smoothie, and I wondered about getting home over the Vernonia Highway summit in the dark. I was not going to risk my life getting the dollar video rental back by 6pm. I ended up sharing the film 'My House in Umbria' with my room renter/friend, and stayed overnight in what I call the elf room. 

My little Geo made it through the slush in the morning, 25 miles to Vernonia. I left my friend a pint of Mattie's Bean Soup that we were going to share for supper, originally, before I got sidetracked.  It's one of those hearty, easy recipes for winter that tastes better the next day, and the next.... 

Mattie's Bean Soup
1. Brown and drain 1 lb. hamburger. (You can use ground turkey, chicken or beef, but I'd suggest meat without nitrates, antibiotics or hormones)New Seasons, Whole Foods, Sheridan's in Portland, Oregon, etc.

2. Blenderize 1 qt. canned tomatoes (or two 14.5 oz.cans) 1 med onion, 1 red bell pepper, 1 tsp seasoning salt, pepper to taste and 3/4 tsp. thyme.

3. Add with 1 qt. water to the drained meat in a large pan, 2 cans drained kidney beans and 2 cups diced raw potatoes. Simmer 40-60 min. Best day after soup is made.

Hello From Vernonia, Oregon

This New Year brings the birth of blogging for me. In sharing what I've learned as a single mother of 7, Elder Caregiver, Master's level Social Worker, Graduate Research Assistant in the School of Nursing at UTArlington, Sexual abuse counselor, cook, poet and writer, remodeler, Life and Health Insurance Agent, Waitress, Nutrition Consultant and Cancer survivor, I hope to make a positive difference in the lives of others and this planet. My desire is to leave this world better than I found it in some way. I welcome your open and honest comments, questions, challenges and shared experiences about nutrition and health issues.

I strive for detail and accuracy, good communication and respectful discussions. Passion is a driving force, but vulgarity or personal attacks are asked to take a distant seat to mature, researched contributions and  personal accounts.
I trust that those interested in health are on a path to healthy relating, also.
I heard recently that it is more important to be kind than it is to be right. Though I take health and healing seriously, I hope to share in ways that shape a positive atmosphere.
